Chicken Fricassee

Season both sides of chicken with salt and pepper

Add the olive oil and butter to a large skillet over medium-high heat.

Fry chicken about 5 minutes per side or until golden brown, then remove from skillet.

Reduce heat to medium then add in the onion, garlic, carrots, and celery. Sauté until soft, about 5-8 minutes.

Add in the flour and cook for 1 minute, then pour in the white wine and heavy cream.

Bring to a boil then reduce to a simmer until sauce has thickened, about 2 minutes.

Add chicken back into the skillet along with the thyme and bay leaf, then cover and cook for 20-25 minutes or until chicken is cooked through.

Sprinkle with fresh parsley and serve.
