Cheesy Ham & Potato Casserole
Preheat oven to 400°F. Melt butter in saucepan over med heat. Add in the chopped onion, then cook for 5 mins or until soft.
Add in the all purpose flour and stir to combine. Cook for 2 mins.
Pour in the milk, then stir and reduce heat. Simmer for 3-4 mins. Remove from heat.

Stir in the cheese until melted.
Place half of sliced potatoes in baking dish. Top potatoes with cubed ham. Repeat layers for remaining potatoes & ham.
Repeat until you've used all the potatoes & ham up.
Pour cheese sauce over top layer. Top with additional 1/4 cup shredded cheese if desired.
Cover baking dish with foil. Bake for 45-50 mins, or until potatoes are fork tender. Remove foil & cook for another 20-25 mins until cheese is brown and bubbly.
